100s & 1000s biscuits recipe

A homemade gift is the best kind, especially when it’s edible! These festive biscuits, with their melt-in-your-mouth texture and picture-perfect appearance, make a wonderful present for absolutely anyone. That is, if you can resist eating them when they come out of the oven!

INGREDIENTS
 
500g unsalted butter, softened
3⁄4 cup brown sugar
395g can sweetened condensed milk
5 cups self-raising flour
400g pure icing sugar
100s & 1000s 
 
METHOD
 
1 Beat butter and sugar together in a large bowl of a stand mixer until creamy. Add milk and beat until combined. Stir in flour until combined. Divide dough into four equal portions.
2 Preheat oven to 170°C. Roll heaped tablespoonfuls of dough into balls and place on baking paper-lined trays. Use the back of a fork to press down on dough to flatten.
3 Bake for 15 minutes or until pale golden. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
4 Sift icing sugar into a large mixing bowl and stir in 2-3 tablespoons of water to form a smooth paste. Carefully spread icing onto cooled biscuits and sprinkle with 100s & 1000s. Set aside until icing has set. Store biscuits in an airtight container for 3-4 days.
